Virginia Department of health (Week 6)

The Virginia Department of health are the local and state health regulators to Virginia. They are in charge of writing our needed regulations to keep food safe, as well as inspecting our establishments. Visit the Virginia Department of health website, and research the most resent health inspections for three different restaurants in your area. The link is below. Write a brief overview of the inspections and the violation the establishments had. Please include how they could have prevented the hazard or problem in the kitchen.

  1. One of the many restaurants in Norfolk is Franco’s Italian Restaurant on 6200 N Military Hwy. Their most recent inspection was on September 8th, 2016. During this routine inspection, there were unfortunately many violations. One violation being no proper hair restraints and contamination with the hands during food preparation. They could easily prevent any contamination with the food by wearing any type of hair restraints, such as hair nets, and using proper food utensils. They also violated the use of wiping cloths and used improper food storage. Along with the improper use of food storage, the ready-eat-foods were not properly dated for disposition, claiming them potentially hazardous. In the future, they could avoid any of these violations by using clean wet wiping cloths, storing food on, at the minimum of 6 inches, shelves and mark the “consume by” date on the container of the ready-to-eat food at time of preparation if it were to be held for more than 24 hours. If it is held at 41 degrees Fahrenheit or below then it should be served within 7 days. Overall, no follow up inspections were required.

Another restaurant in Norfolk is El Azteca Mexican Restaurant on 1522 E Little Creek Rd. Their last inspection was on October 3rd, 2016. Unfortunately, this facility had several health code violations. The critical violations were that employees were eating and drinking within distance of food preparation, hot-holding chicken was held at unsafe temperature of 120 degrees Fahrenheit, and containers of toxins were not commonly named or properly stored. Ways to prevent any more of these very violations, employees must eat or drink from closed containers and keep hot-held chicken at a safe temperature of 135 degrees Fahrenheit or above to prevent any bacteria growth. Also, properly name any containers full of toxins or cleaning chemicals to avoid any harmful contaminations and place in safe distance from food.

The final restaurant is Chick-fil-A on 1205 N Military Hwy. This fast food restaurant last health inspection was on September 20th, 2016. During this routine inspection, there were no violations at all. All of their equipment and food were at the correct temperatures, cold-held or hot-held. Overall, this restaurant has met all the correct expectations.

The employees failed to properly put away the
wet maintenance items such as the mops and brooms. There are ways they are supposed to be hung to air dry to prevent the growth of contamination that could appear on them and then could possibly be spread throughout the establishment.

A violation here was that the employee failed to correctly use the hair restraints. Employee's hair is hanging over the visor or not in the hair restraint at all. Its bad because that person hair could then come in contact with any open food, utensils, clean equipment. etc... To prevent this the staff should be more cautious and wear restraints to completely cover their hair such as hats, nets, clothing that cover head, or whatever ...anything to keep away the contaminating hair.

In this establishment there were thermometers missing inside some refrigeration units & that's not good because that's how you check the temperature your produce is frozen to properly , so nothing gets contaminated by pathogens. To correct this , the work place just need to make sure that there are thermometers wherever they should be .

Also they need to keep their utensils closed up or hung up some wear instead of just being left around to because they are being exposed to open germs and things in the air if someone accidental drops something on the utensils or drop it then the silver wears won't be protected

Taco Bell's facility type is known as a fast food restaurant. It is provided all year round. It's inspection is done in a routine. In preventing this hazard, it was said to Maintain nonfood-contact surfaces of equipment clean. The second violation was physical facilities in good repair. The fourth and critical violation was an employee not washing his hands after touching raw hamburger meat. A violation committed in the establishment involved employees failing to correctly use the hair restraints. Said employee's hair was hanging over the visor or not in the hair restraint at all. It is a violation because that persons' hair could then come in contact with any open food, utensils, clean equipment. etc... To prevent this the staff should be more cautious and wear restraints to completely cover their hair such as hats, nets, to keep away the contaminating hair.
